New Recipe: Smoky Carrot Dip

When you think of carrots, first thing that comes to mind are the mundane carrot sticks that we usually serve with any dip or hummus. I love the carrot sticks myself, but this humble vegetable has so much more to offer! This carrot dip has a deep, complex flavor, perfect texture and significant substance, and will work great as an appetizer or a snack.

Roasting the carrots in the oven brings out their sweetness and makes them soft enough to be converted into a dip with a nice texture. Adding some chickpeas adds a little creaminess, and almonds create some substance. Smoked paprika, garlic and lemon juice add complexity to the taste, and a bit of extra-virgin olive oil rounds it all up.

And you can still serve it with raw carrot sticks, like i do, they go perfectly well together, as well as with crackers or gluten-free bread.


Carrots are well known as an important food for eye health, but you may not know that they also help reduce risk of cancer and heart disease, lower blood cholesterol and assist in weight loss. They are a great source of beta carotene, fiber, vitamin K1, potassium, and antioxidants, which not only contribute to improved health, but also beautiful hair and skin. Just make sure to buy organic carrots, so you are not consuming any pesticides or toxins that may come with non-organic ones.
